Summer Refreshers at Brio Tuscan Grille

Lower the calories, satisfy hot-weather dining at this popular gathering place in Frontenac.

The temperature is above 100 degrees regularly. The humidity is out of sight. Still, you’ve got to eat. So what to do? Head directly to Clayton and Lindbergh on the northeast corner of the lot at Plaza Frontenac and cool down.

The outdoor patio, cooled by overhand fans is still functioning for 150 diners. Inside and out, Brio is serving summer specials, enough to cool the hottest palate.

Shy Patel, general manager and Ryan Fico, manager know just what to order to cure the summer blues.

The two say look no further than one of their seven entree’ salads or one of their four dinner salads.

The coolest item on the summer menu:

Strawberry Balsamic Chicken Salad

Mixed greens, tossed with grill chicken, fresh grapes, candied pecans, Gorgonzola and dashed with a light dose of herb vinaigrette. Like any other salad, the secret is in the dressing. The vinaigrette fuses with the strawberries and is one of the tastiest salads in town. Just 500 calories for the weight-watching diner.

Grilled Salmon Salad

Roma tomatoes, asparagus, Feta, crispy shoestring potatoes with another light serving of balsamic vinaigrette.

More light summer pleasures.

Beef Carpaccio

An appetizer served with field greens, capers, mustard aioli and Parmigiano-Reggiano.

Flatbread topper

Chilled Tomato Caprese Bruschetta

With Roma tomatoes, yellow cherry tomatoes, Mozzarella, extra virgin olive oil, basil, Reggiano and cilantro pesto.

Penne Mediterranean

Mushrooms, spinach, sun-dried tomatoes, caramelized onions, Feta and pine nuts.

“We serve all of our dishes only with the finest of fresh ingredients. We only have one microwave in the place and that’s to warm butter when we’re in a hurry,” said Patel. “Other places served processed foods like chicken on salad. Ours is the freshest anywhere,” said Patel.

Of course any summer meal needs to be washed down with a cooling drink.

The Brio menu features a watermelon cool of crushed melons with a Sierra Mist mix.

Other spirit free summer sizzlers include:

White Peach Palmer: Monin White Peach Puree, housemade lemonade and Ice Tea.

Wildberry Lemonade: Monin Wildberry syrup,housemade lemonade and fresh raspberries.

Strawberry Basil Lemonade: Fresh crushed Basil and Strawberries with housemade lemonade with a sugared rim.

Tuscan Berry Fresca: Monin Wildberry Syrup, fresh berries, mint and lime juice with Sierra Mist.

Summer Wines

A host of refreshing Pinot Noir, Merlot Cabernet Sauvignon and select regional wines imported directly from Italy.

Brio, with 35 restaurants spread across the country and in its ninth year on the corner in
