Fajitas, Flatas, Quesadillas Margaritas will all be ready to help celebrate this national holiday in Mexico.

Cinco deMayo is a national holiday for Chevy’s Fresh Mex in Olivette. The staff is pulling for clear skies and nice weather as patrons celebrate this national Mexican Holiday, Chevy’s style.

Patch.com recently did an interview with Zerfu Habte, general manager who has supervised the sales of every Enchiladas and Fajitas since 1994.

Prior to that, the restaurant was the Border Grill.

Patch.com: Cinco deMayo falls on a Sunday. Will that mean as many customers as in the past?

Zerfu Habte: “We will be very busy, but perhaps, not as much as in the past when it fell on a Friday or another week day. Either way, we will be ready.”

Patch: How will you handle all of the parking that day?

ZH: “We will fill up the whole parking lot. And we’ve made arrangements to share parking with CVS Pharmacy (next door) and Office Max (on the south side of Olive Street. We are asking all of our employees to carpool to free up spots.”

Patch: Will there be a special price on items that day?

ZH: “We have the same menu with special prices on Margaritas and draft beer and some discounts on appetizers. We’ll have some some sombreros and tee shirts for sale that day.”

Patch: How about entertainment?

ZH: “We will have a D.J. from 4 o’clock until we close (around 11 p.m.). If people are having a good time, we may stay open even a little longer.”

Patch: What are the favorite food selections?

ZH: “People like the Quesadillas, the Flatas; Fajitas, steak and chicken of course. They like lots of pick up items. Burritos are our number one seller.”

Patch: Why is Mexican food so popular in St. Louis?

ZH: Its easy. You get a lot of vitamins. We hope it stays that way. We go through so many Salsa chips.

Patch: How has it worked out moving your entrance to the back parking lot?

ZH: “Really good. When MoDOT did their project (rebuilding the bridge and the roadway) we moved the door from the street front to the back. This has been easier for everyone.”

Patch: You have the best location in town (Highway 170 and Olive)?

ZH: Yes we do. People come from all over the area. Chevys has five locations but a lot of people tell us they like ours the best. People come from Webster Groves; Hazelwood, St. Charles, you name it. We have customers as far away as Columbia, Missouri.

Patch: Chevys is probably the best thing to every happen to Olivette?

ZH: “Of course. People should come, have a good time and have a safe day.”
